Seasoned Baby Potatoes with Chard
Potatoes get a bad rap. French fries and potato chips are not healthy! But, you can make really yummy dishes with potatoes that are healthy. Try this one! Whenever you cook potatoes add marjoram and/or rosemary as these spices really pair well.
Ingredients
1 cup baby potatoes
1 teaspoon coconut oil
1/2 onion
1 teaspoon marjoram
1 teaspoon rosemary
4-5 small swiss chard leaves (or 1-2 large leaves)
1/4-1/2 teaspoon garlic powder
salt/pepper
Cut baby potatoes into half lengthwise and crosswise. Dice onions. Remove stem from swiss chard and cut into thin strips. Add potatoes to a cast iron pan with a little oil on high heat. Let cook for a few minutes, then stir. Repeat this process until the potatoes are browned on the outside. You should be able to pierce the potato piece with a knife. Add onions and turn heat down. Add a little water if you need to in order to prevent sticking. Add marjoram and rosemary. Cook for about 5 minutes. Add swiss chard and garlic powder. Cook until the swiss chard is wilted. Add water a little at a time to prevent sticking. Season with salt and pepper to taste.
Serve as a side dish with sandwiches, grilled vegetables or add to a bowl.
Creative Options
Add diced bell peppers, especially red, for a pop of colour
For even quicker preparation, eliminate the swiss chard and garlic powder
Add 1 teaspoon Worcestershire sauce (make sure it is vegan) and 1 teaspoon water
Instead of swiss chard, try kale, spinach or any hearty green
