No Bake Peach Cobbler
Jul 22, 2019Make the most of summer fruit with this delicious and super easy peach cobbler. No bake means you don’t even need to turn on the oven and heat up the kitchen.
CRUST
1 cup buckwheat groats (not kasha)
1 cup dates, pitted (about 8 medjool)
1 teaspoon cinnamon
½ teaspoon nutmeg
1 teaspoons agave
FILLING
2 peaches, pitted and chopped
Sprinkle of ground clove and cardamom
1/2 teaspoon ginger
Healthy handful almonds, roasted, then chopped
Juice of ½ orange
Handful rolled oats
Handful raisins
TOPPING (OPTIONAL)
Sliced peaches
1 tablespoon coconut cream
Roast nuts by placing a cast iron pan (or heavy bottom pan) burner. Turn on high heat. Pan is ready when a drop of water dissipates immediately. Place nuts in hot pan stirring constantly until you can smell the roasted nuts. This should only take a couple of minutes. Be sure to stir constantly in order to keep nuts from burning. Turn out onto a plate or cutting board to cool slightly, Rough chop.
Place buckwheat groats into a food processor and pulse until broken down. Add pitted dates and pulse until combined. Add cinnamon and nutmeg. Add agave and pulse until you have a consistency that sticks together. Wet hands and place dough into serving dish. Wetting your hands will ensure dough does not stick to your hands.
Remove pit. If desired, peel peaches (I don’t but this is a personal preference). Using a serrated knife, cut fruit into small pieces. Mix with roasted nuts, rolled oats and raisins. Add orange juice and seasoning. Mix well and spoon on top of crust. Place in refrigerator to chill.
Serving options – serve as is, or top with sliced peaches and a dollop of coconut cream.
VARIATIONS
Substitute nectarine for peach.
Experiment with different nuts like walnuts or pecans
Try adding soaked dates or apricots
