Portabella Mushroom Burger with Pesto

I love mushroom burgers! This 30 minute meal is easy and delicious. Add whatever toppings you love to the mushroom burger. Be creative and create a ‘burger bar’. Let everyone pick what they like best. The best part is leftover pesto has a ton of other uses throughout the week.


For each mushroom burger you need:

1 Portabella mushroom
1 Bun
2 Lettuce leaves
2 Tomato slices
2 Red onion rings
2-3 Avocado slices Vegan mayo (optional)

With a spoon, gently remove the gills from the mushroom. (This removes any bitter or woodsy taste.) Remove stem. Place in a pan with a little olive oil on medium-low heat, top side (the side opposite where gills where) down. Cook about 10 minutes, turn. Cover pan. Cook about 10 minutes and turn again. Cook on each side until the mushroom has flattened and is soft. You may need to add a little water to the pan to prevent sticking.

Meanwhile prepare pesto. Prepare lettuce, slice tomatoes and red onion.
